Sweet & Spicy Smoked Pork Chops with Noodles

INGREDIENTS
- double bone pork chops or cutlets (1–2” thick)
- your favorite barbecue rub
- 2 packs Momofuku Sweet & Spicy Noodles
- 1 bunch scallions, thinly sliced
- kimchi
- Momofuku Chili Crunch Hot Honey (for finishing drizzle)
For the Marinade:
- 1⁄2 cup Momofuku Sweet & Spicy Korean Barbecue Sauce
- 2 tablespoons Momofuku Soy Sauce
- 1 tablespoon Momofuku Chili Crunch

Mix marinade ingredients until well combined.
Pour and slather your marinade over your pork chops. Pork chops should marinate for at
least 1 hour and no more than 6 hours.
Set your grill or smoker to 275F using lump charcoal, hard wood chunks, or a
mixture of both.
Once the marinating period is over, wipe the excess marinade from the chops.
Liberally sprinkle your favorite barbecue rub on the chops.
Add to your smoker and cook until an internal temperature of 145F.
Once the internal temp is reached, remove from the smoker and allow to rest for 10-15 minutes.
Cook Momofuku Noodles as specified on the package.
Once the noodles are strained, slice your pork chops. Arrange pork chops on top of noodles with alongside piles of scallion and kimchi.
Drizzle with Momofuku Chili Crunch Hot Honey.
