Billionaire’s Bacon With Chili Crunch Maple Glaze

This isn’t your average candied bacon — thick-cut strips get roasted low and slow under a thick blanket of brown sugar, then lacquered with a fiery-sweet glaze of maple syrup and Chili Crunch. Halfway through, add more glaze and sugar so the bacon finishes sticky, shatteringly crisp, and deeply caramelized. This recipe comes from our friends at @mikeandpattys and @tastemakermike. INGREDIENTS

  • 1 lb (450 g) thick-cut, uncooked bacon
  • 1 cup (240 g) pure maple syrup
  • 4 tbsp (60 g) Chili Crunch (or other flavor Chili Crunch)
  • 1 cup (8 oz / 230 g) packed light brown sugar

Directions

Preheat oven to 325°F (165°C). Line a rimmed baking sheet with foil and place a wire rack on top.

 

Mix the glaze: In a small bowl, whisk together maple syrup and Chili Crunch until smooth.

 

Arrange the bacon: Lay the bacon strips in a single layer on the rack without overlapping.

 

Glaze & sugar: Brush each strip generously with the chili-maple glaze, then sprinkle evenly with half of the brown sugar.

 

Bake & refresh: Roast for 35–45 minutes, until the bacon is caramelized and crisp at the edges. At the 20-minute mark, rotate the pan, flip the strips and brush with more glaze, and sprinkle on the remaining brown sugar.

 

Cool & set: Let the bacon rest on the rack for 5–10 minutes before serving—it will firm up as the glaze hardens.
