Tingly Lamb Skewer Burgers with Tangy Tomatoes

These easy lamb skewer burgers are optimized for grill pan char—but you could just as easily roll them into regular shaped burgers if you prefer. Don’t skip on the tangy tomato mixture on top.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 small shallot, finely chopped
  • 1 teaspoon Momofuku Rice Vinegar
  • 1 teaspoon Kosher salt
  • 1 5.3 oz cup of Greek yogurt
  • 1 tablespoon Momofuku Chili Crunch
  • 1 pound ground lamb
  • 1 tablespoon Momofuku Tingly Seasoned Salt
  • 1 tablespoon Momofuku Soy Sauce
  • 4 hot dog or split-top buns

Directions

Prepare your toppings. Toss tomatoes, chopped shallot, Momofuku Rice Vinegar, and Kosher salt in a small bowl until well combined. Stir Momofuku Chili Crunch into the yogurt container. Set both aside.


Combine ground lamb with Momofuku Tingly Seasoned Salt and Momofuku Soy Sauce, then roll into log-shaped patties and insert skewer through the middle.


Heat grill pan over high heat until very hot. Sear skewers on each side for 2–3 minutes, until cooked through.


To assemble the burgers, spread each bun with some of the Chili Crunch yogurt, then add a lamb skewer, and top with the tangy tomato mixture.
