Dave Chang's No Rules Pizza Content
There’s a time and place to cook by the rules, especially when you have a paying customer, and they’re looking for an exact experience. But this kind of cooking—no rules, trying things out—is fun. I made a pizza on the stove because I had a massive pan, but if you don’t have this pan, I strongly suggest you break even my rules and cook this pizza in the oven.
Heat your oven to 500° F, as hot as you can get it. Take a pack of store-bought pizza dough and stretch it out using olive oil into a large circle or rectangle, whatever will fit in your sheet pan. Coat your sheet pan in olive oil, add your pizza dough, then place in the oven and bake until it’s starting to crisp up and brown.
Top with a few spoonfuls crème fraîche—or cheese, if you have it and that’s what you prefer. (Again, don’t be afraid to break my rules.) Then add your favorite sauce—I used this pork ragu I made with half a jar of Chili Crunch. Add more Chili Crunch, and put the pizza back in the oven long enough for the sauce to heat and the flavors on top to combine.
Take it out of the oven, transfer to a cutting board to slice, and add more crème fraîche.
