Sweet & Sour Tofu with Seared Scallions
This recipe comes together with a surprising few ingredients, thanks to the flavor-packed Momofuku Sweet & Sour Sauce, which brings the savory tofu together with the sweetness of the sautéed scallions. The key is pressing some of the water out of the tofu and leaving it to fry undisturbed in the pan until it’s golden brown. It adds key texture and helps hold everything together.
Serves 2.
INGEDIENTS
- 1 pound extra-firm tofu
- 1 bunch scallions, white and green pieces, cut into 2 inch spears
- ¾ cup Momofuku Sweet & Sour Sauce
- neutral oil, such as avocado oil
- Kosher salt
- sesame seeds
Directions
Place tofu between two paper towels, and place something heavy on top, such as a cast iron skillet and allow the moisture to drain out for 10 minutes. Then, cut the tofu into ½-inch sized cubes. Season with Kosher salt.
Heat 2 tablespoons of oil in a wok or non-stick skillet over medium-high heat until hot, then place tofu in a single layer on the bottom of the skillet. Let it cook for 2–3 minutes, until golden brown then using tongs, carefully flip. Once two sides are browned, remove from the skillet. Repeat this process, depending on the size of your skillet, until you have gone through all your tofu.
Add 1 more tablespoon of neutral oil to the skillet, then add scallions and cook for 30 seconds, until they are just starting to soften. Add tofu back to the skillet with the Momofuku Sweet & Sour Sauce and gently stir until the sauce is thickened slightly, coating the tofu. Remove from heat and top with sesame seeds.
Serve with steamed rice or Momofuku Sweet & Spicy or Tingly Chili Noodles.
