Miso-Ginger is built on the same logic as a great galbi marinade: miso for umami depth, soy for richness, ginger for the brightness that keeps it from being heavy. The combination is assertive enough to stand up to a skirt steak or a rack of ribs, and nuanced enough not to overwhelm a piece of fish or a bowl of roasted vegetables.
