Vinegar Pickles

These easy pickles make a wonderful noodle topping and are equally good on sandwiches, burgers, and stews.

Ingredients

  • 1 medium red onion, sliced (or other vegetable such as carrots, cauliflower, or fennel)
  • ½ cup Momofuku Rice Vinegar
  • 6 tablespoons sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon black peppercorns (optional)

Directions

Bring rice vinegar, sugar, salt, peppercorns (optional), and 1 cup of water to a boil. Pour over the onions and let sit for a day or so.

 

These are best after a few days—and they should last up to a month.
