Ingredients
- 1 medium red onion, sliced (or other vegetable such as carrots, cauliflower, or fennel)
- ½ cup Momofuku Rice Vinegar
- 6 tablespoons sugar
- 2 teaspoons kosher salt
- 1 teaspoon black peppercorns (optional)

These easy pickles make a wonderful noodle topping and are equally good on sandwiches, burgers, and stews.

Bring Momofuku Rice Vinegar, sugar, salt, peppercorns (optional), and 1 cup of water to a boil. Pour over the onions and let sit for a day or so.
These are best after a few days—and they should last up to a month.
