Momofuku Sweet & Savory Korean BBQ Sauce has been a workhorse marinade in our restaurant kitchens over the past 20 years. The key is pear juice: it brings balance with its aromatic sweetness while the juice’s enzymes act as a natural meat tenderizer. It’s core to our Momofuku pantry and we know it will become essential in yours.

KOREAN-AMERICAN ROOTS

While we’ve been working with this sauce for the past 20 years at Momofuku, Dave’s been eating versions of this sauce his whole life. His mom’s galbi marinade always included pear, soy, and sweet mirin (even though she always refused to reveal her real recipe!). These flavors were essential to Dave’s Korean-American upbringing, as well as the Momofuku pantry.

In 2015, we launched Ssäm Sauce, our first “Korean BBQ sauce,” and our community's been asking us to bring it back for years. We’ve spent the time since tweaking and improving this sauce so it matches the restaurant-grade quality of our current pantry line. And we don't water anything down so that every squeeze is flavor-packed.
