Crispy Noodle Pizza with Spicy Pork Sauce
We love crispy noodles—and we thought, why not an entire crust of noodles? It’s a bit of a hack recipe, but it’s a fun addition to any weeknight dinner.

Ingredients
- 4 packs Momofuku Spicy Soy Noodles
- 1 medium onion, sliced
- 3 cloves garlic, sliced
- 1 lb ground pork
- 2 tablespoons gochujang
- 2 tablespoons tomato paste
- 1 lb low moisture whole milk mozzarella cheese, grated
- 3 scallions, sliced

Directions
Heat oven to 450°F.
Cook noodles for 4 minutes, then drain, shake completely dry, and cool slightly. Coat the bottom of a ¼ sheet pan with a teaspoon of olive oil then add your noodles, spreading all the way to the edge. Add some olive oil to your hands and press the noodles into the sheet pan, forming a dense layer. Place in the oven and roast for 35 minutes, until crisped.
While the noodles are baking, prepare your sauce. Heat 1 tablespoon olive oil in a large skillet over medium heat, then add sliced onion and cook until very soft, about 10 minutes. Add garlic and cook for another 2 minutes. Add in pork and break up with the back of your spoon, cooking about 8 minutes until it is completely cooked and beginning to brown.
Stir in tomato paste and gochujang and allow it to toast and darken slightly in color, about 1-2 minutes. Add noodle sauce packets and a cup of water and bring the mixture to a boil. Continue cooking until the mixture has reduced to a sauce, about 8-10 minutes.
Turn the broiler on high and position a rack in the top of your oven. Pile the spicy pork sauce on top of your noodles, then top with grated cheese and sliced scallions. Broil for 2–3 minutes until cheese is fully melted and bubbling.
Slice and serve with more scallions on the side.
