Meet Momofuku Chili Crunch. This spicy-crunchy chili oil is our go-to way of adding a flash of heat and texture to our favorite dishes.


Made with the same umami-rich base as our Seasoned Salts, Chili Crunch combines three dried Mexican chilis with crunchy dried garlic and shallots. We’ve been working on Chili Crunch since the early days of Momofuku Ssäm Bar, and it’s inspired by our love and respect for Chinese chili-crisp sauces like Lao Gan Ma, as well as crunchy Mexican salsas like salsa macha and salsa seca. From that base, we layer in three different chilis for a complex smoky-sweet punch. The Pulla brings a bright fruitiness. The Chili de Arbol adds a nutty smokiness. And the Japones closes with a lingering spiciness.

Finally, we add in crispy dried garlic and shallots. They give Chili Crunch an addictive texture that ensures no two bites are the same.

Recipes

Rice Porridge

1 cup jasmine rice

10 cups water or broth 

1–2 inches ginger, peeled and finely sliced 

¼ cup scallions, sliced

¼ cup cilantro, roughly chopped 

2–3 tablespoons Momofuku Chili Crunch, to taste
Momofuku Savory Seasoned Salt, to taste

Rinse rice until water is clear to remove excess starch, then move to a medium pot and fill with water or broth and sliced ginger. 


Bring to a boil, then lower to simmer.Allow it to simmer for about 1½ – 2 hours, stirring occasionally from the bottom to prevent rice from sticking and burning at the bottom of the pot. If consistency becomes too thick, add more water or broth. If the consistency is too thin, simmer for longer. Do not season until you are ready to eat. 


Add Savory Seasoned Salt, or salt and pepper, to taste and portion immediately in four bowls. Top each bowl with a tablespoon each of scallions, cilantro, and Momofuku Chili Crunch.

Cucumber Crunch Salad

1 large cucumber, halved and sliced 

5 red radishes, thinly sliced

2 tablespoons tahini 

2 tablespoons Momofuku Chili Crunch 

1 teaspoon Sesame Oil 

¼ cup chopped cilantro
Momofuku Savory Seasoned Salt, to taste


Combine cucumbers, radishes, and tahini in a bowl. 


Season lightly with Momofuku Savory Seasoned Salt or salt and pepper. Drizzle with Momofuku Chili Crunch and sesame oil, and top with chopped cilantro. 


Serve immediately.

Recipes
